Tina's Split Pea Soup

 

This soup is easy to put together and cooks in about an hour. We usually double it for leftovers the next day, as bean soup really does seem to get better the next day. Serves 6 hungry people, or 8 not so hungry people.

 

1 lb Bratwurst ( Turkey ham or kielbasa also works)

1 cup each chopped onions, carrots and celery

4 garlic cloves, crushed

 

Brown the above in a large pot with just a touch of your favorite oil. When onions are translucent, add:

 

7 cups water

1 lb split peas

1-2 tsp salt

2 bay leaves

½ tsp black pepper

Pinch cayenne pepper

 

Simmer briskly about 30-45 minutes, stirring occasionally, until the split peas are tender and have made a good broth. It can be cooked until the peas are mushy and very soft - maybe 15 minutes more. This will be a matter of texture preference - smooth and creamy, or a little more chunky. Remove bay leaves before serving.
