Swiss Steak Recipe
2 pounds tenderized round steak ¼- ½ cup flour 1-2 tsp salt, ¼ tsp pepper Herbs and spices: (optional) ¼ tsp sage, ½ tsp garlic, dash of basil, ¼ tsp allspice 3 TBS olive oil 1 lb fresh or canned tomatoes 1 Green pepper, cut into chunks 1 onion, cut into quarters ¼ cup chopped fresh parsley, or 1 TBS dried parsley
Combine flour, salt, pepper and spices (if desired.) Brown on both sides in oil. Combine tomatoes, green pepper, and onion in food processor. Pour over meat. Cover and cook in 275 degree oven for 1 1/2 - 2 hours or until tender. Serve the tomato gravy over rice, noodles, or millet. |
